Kung Pao Chicken

Ingredients

  • 1 lb cubed chicken breast
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1/4 cup soy sauce
  • 2 tbsp dry sherry
  • 1 tsp sugar
  • 2 tbsp chicken stock
  • 2 tbsp balsamic vinegar
  • 1 tsp sesame oil
  • 10 cut in half Szechuan peppers with seeds
  • 2 green onions
  • 1 medium white onion, sliced
  • 1 red bell pepper, sliced
  • 1/2 cup crushed peanuts
  • 2 cloves garlic
  • 1 tbsp minced ginger

Instructions

  • Step 1

    Mix 1 tbsp soy sauce and corn starch over chicken and let sit for a minute or two
  • Step 2

    Mix, 1/4 cup soy sauce, sherry, sugar, chicken stock, balsamic, and sesame oil in a bowl and set aside
  • Step 3

    Preheat pan over medium high heat. Add oil and chicken.
  • Step 4

    Cook chicken, tossing often until fully cooked
  • Step 5

    Add another splash of oil and add veggies, cook until soft
  • Step 6

    Make a well, add some oil, a couple gloves of minced garlic and a tiny bit of minced ginger
  • Step 7

    Once fragrant mix together
  • Step 8

    Add chicken and peanuts if using and mix
  • Step 9

    Add sauce and cook until the sauce thickens
