Mexican Street Corn

Ingredients

  • 4 shallots, diced
  • 4 jalapeños, diced
  • 4 ears of corn, removed
  • 3 tbsp fajita seasoning
  • 1 juice of lime
  • 1 cup cotija cheese
  • 8 oz queso fresco cheese
  • 2 tbsp avocado oil

Instructions

  • Step 1

    Preheat smoker, or oven, to 450
  • Step 2

    Cook shallots and jalapeños in oil in cast iron pan until soft
  • Step 3

    Remove shallots and jalapeños and set aside
  • Step 4

    Add splash of avocado oil and corn kernels, cook for 15 minutes
  • Step 5

    Add fajita season and lime to corn kernels
  • Step 6

    Add shallots and jalapeños back to pan
  • Step 7

    Add cotija cheese and cook for 3-5 minutes
  • Step 8

    Add queso fresco and cook until cheese is melted
