Ingredients
- 2 whole russet potatoes
- 2 large red onions
- 3 cups chicken broth
- 2 tbps butter
- 1 1/2 cups heavy cream
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1 tsp pepper
Instructions
Step 1
Peel and dice potatoes Step 2
Put potatoes in large pot, cover with chicken broth, and simmer until fork tenderStep 3
Cook onions with diced up bacon until just short of burntStep 4
Add onions and bacon to potatoes when potatoes are softStep 5
Add heavy cream to pot and simmer for 5-10 more minutesStep 6
With the back of a spoon, smash potato pieces against the side of the pot to thicken soup
