Potato Soup

Ingredients

  • 2 whole russet potatoes
  • 2 large red onions
  • 3 cups chicken broth
  • 2 tbps butter
  • 1 1/2 cups heavy cream
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 tsp pepper

Instructions

  • Step 1

    Peel and dice potatoes
  • Step 2

    Put potatoes in large pot, cover with chicken broth, and simmer until fork tender
  • Step 3

    Cook onions with diced up bacon until just short of burnt
  • Step 4

    Add onions and bacon to potatoes when potatoes are soft
  • Step 5

    Add heavy cream to pot and simmer for 5-10 more minutes
  • Step 6

    With the back of a spoon, smash potato pieces against the side of the pot to thicken soup
