Twice Baked Potatoes

Ingredients

  • 2 russet potatoes
  • 1/3 cup sour cream
  • 2 tbsp butter
  • 4 pieces, chopped bacon
  • 1/3 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tbsp coarse sea salt

Instructions

  • Step 1

    Preheat oven to 400
  • Step 2

    Rub potatoes with oil and sprinkle coarse sea salt over potatoes
  • Step 3

    Bake potatoes for 1 hour
  • Step 4

    Cut top 1/3 off potatoes
  • Step 5

    Scrap insides of bottom and top of potatoes, being careful not to break skin
  • Step 6

    Mix scraped out part of potato with sour cream, butter, bacon, and cheese until smooth
  • Step 7

    Fill bottom 2/3 of potatoes with filling
  • Step 8

    Bake for 15 more minutes
