Beef and Broccoli Bowl


  • 1 1/2 cup medium grain white rice
  • 3 cups water
  • 1 lb shaved beef
  • 3/4 cup sweet chili sauce
  • 3 tbsp sriracha
  • 3 cups shredded carrots
  • 4 cups broccoli florets
  • 1 tbsp olive oil
  • 1/4 cup roaster, unsalted peanuts crushed


  1. Cook rice and water
  2. Heat olive oil in pan on medium heat, add beef and cook through
  3. Reduce heat to low. Add sweet chili sauce, sriracha, soy sauce
  4. Stir until sauce is combined, beef is coated
  5. In a separate pan, add broccoli florets with 2 tbsp of water and cover. Steam on low heat for about 5 minutes
  6. Remove cover and add shredded carrots
  7. Stir to combine and cook until carrots soften
  8. Assemble your bowl by plating rice first, then beef, then veggies, and crushed peanuts on top
