Beer Cheese Sauce

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp dry mustard
  • 1 tsp salt
  • 1 cup milk
  • 2 cups shredded sharp cheddar cheese
  • 4 oz diced green chilies (canned)
  • 1/2 cup light beer

Instructions

  1. Add butter and flour to sauce pan over medium heat and whisk until smooth
  2. Add mustard, salt, pepper, and mix
  3. Slowly mix in milk until smooth and thicker
  4. Whisk in beer
  5. Add cheese handful at a time and stir as adding
  6. Add green chiles
