Potato Soup

Ingredients

  • 2 whole russet potatoes
  • 2 large red onions
  • 3 cups chicken broth
  • 2 tbps butter
  • 1 1/2 cups heavy cream
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 tsp pepper

Instructions

  1. Peel and dice potatoes
  2. Put potatoes in large pot, cover with chicken broth, and simmer until fork tender
  3. Cook onions with diced up bacon until just short of burnt
  4. Add onions and bacon to potatoes when potatoes are soft
  5. Add heavy cream to pot and simmer for 5-10 more minutes
  6. With the spoon, smash potato pieces against the side of the pot to thicken soup
